I'm wondering which V6 BMW engine would fit a 1995 318i...any help would be greatly appreciated!!!

As only one answerer correctly pointed out, BMW makes inline or straight 6-cylinder engines. They do not make V6's.
Transplanting a 2.5 or 3.0 litre six into a 318 could be done, but it will be expensive, complicated and would probably cheaper to simply sell and purchase a used 325i.
I've done BMW swaps before and it's no picnic. There are electronic compatibility issues and the Bosche FI systems color coding varies from one year to the other. Newer BMW models use K-bus which means you have to practically pull the entire wiring harness from the donor car.
Then there are cooling system issue as you will have to install a larger radiator, fuel pump issues, the entire exhaust must be replaced, throttle body, mass airflow sensor, air filter, transmission linkage, driveshaft length, front suspension to handle the extra weight, bigger brakes and numerous other custom issues to deal with. Trust me - you don't want to go there. By the time you finish, you'll have an expensive custom car, that will be difficult to smog and sell later.
If you want the 325 or 330, then sell yours on eBay and spend an extra $2000 and get the six cylinder model instead...
